Lima is impressive through the attention the chefs invest in the food they cook. Each dish is so carefully prepared and arranged that it often reminds me of some delicious post-modernist painting. I tried the beef pachamanca, the salmon causas and the dulce de leche ice cream and they were all unbelievable (I was famished, so that might have contributed to the experience). The design of the interior is also incredible and it succeeds in harmoniously blending South American themes with a modern feel. The place is not very "traditional", so be careful what your expectations are.
